Baked Dory with potatoes


Ingredients:

Dory fish meat (Sliced)
[available at any supermarket in Malaysia but so far tesco is the cheapest]
Daun Limau Purut (minced)
1/2 a lemon
1 Spring onion (chopped)
Garlic (chopped)
Onion (chopped)
A few potatoes (Thinly sliced depending on the size of your baking dish)
Butter
Olive Oil
Ginger (sliced into thin strands)
Fresh wild mushrooms (washed and cleaned but not soaked) [sliced]
1 Capsicum (minced)
Shao Hsing Hua Tiao Chiew (chinese alcohol available at supermarkets)
Red wine vinegar
Salt
Pepper
tomatoes (sliced)
Black Pepper Sauce

Method:

For the potatoes:

Pre heat oven.
Put a generous amount of olive oil into baking tray dish (but not too much) and make sure its spread all over the dish.
Put the potatoes in and mixed them with the oil.
Put into oven and bake while preparing the other ingredients.

For the mushrooms:

Chop garlic & onion. Fry till fragrant with butter, then add in sliced mushrooms, followed by daun limau purut, tomatoes, a dash of red wine vinegar, and the Shao Hsing Hua Tiao Chiew.
Put in some paprika powder, pepper, & oregano powder. Cook till the alcohol is dried up but not too dry.
Fry the ginger strips on its own.

For the whole dish:

Take out the potatoes from the oven.
Using a flat spatula, scrape them off the base of the tray but do not break them. Leave them in the tray.
Take the mushroom dish and mixed it in with the potatoes.
After that, place the fish slices on top of the mushrooms and potatoes.
Then take half the lemon and squeeze it all over the dish.
Add a pinch of salt.
Put some chunks of butter on the dish.
Sprinkle the fried ginger & capsicum all over the dish.
Put in to bake till the fish is cooked. Make sure the fish doesnt dry up.

after its finished baking, Sprinkle the spring onions over the dish and serve with some black pepper sauce.
